Odd thanksgiving this year. We're having dinner at our nieces house. The issue is, she doesn't have a working oven.

So I got tasked with making the cornbread stuffing, and greanbean casserole.

My issue, we have an oven the size of a toddlers ezbake oven 😂🤣😂🤣😂🤣🤣

Got a pellet grill the other day. So, that has become my convection oven/ grill/ smoker/ etc......

Currently got the pellet grill going at 200° for an hour making cornbread croutons.

Then I'm gonna bump it to 400° to bake a Dutch apple pie 👍👍👍

Then I'm gonna bump it down to 180° and set to smoke, and gonna drop the green bean casserole and stuffing in there for 20 minutes to get a nice hickory flavor. Then bump it to bake and cover the pans 👍👍👍👍

Dinner is at the nieces at 5, so I'll time it to allow for drive time with the pans wrapped in towels 😁😁😁😁😁😁

In my neck of the woods you boil the turkey carcass for stock.

Add to that the 1.5 pounds of turkey left, a bunch of veggies and some egg noodles, you’ve got a bunch of meals.

Pumpkin Bread makin in the works. I get the Pumpkins, clean them out, de-skin, chop, then shred the meat through the Processor. I clean up my mess, so the wife can make her own.

We usually do 15-20 pans [9×13], then slice each pan into three loaves, almost right out of the oven.

Each loaf goes into a Vac Chamber bag immediately, then into the Vac Chamber for sealing.

Late start.
Edit. 38 loaves.
WE QUIT!!!!! 😂

Deserts from Thanksgiving. My wife does all the deserts, and we provide the appetite. She actually doesn`t cook much but on Thanksgiving Day and I get the other 364. But she does a great job on that day.👍

Bacon is out of the cure and on to the smoker today. Held the smoker at 180 and pulled at 160. Now off to the fridge to rest and firm up before slicing.

Because of travel for our kids, Christmas for us is December 9 this year. Did similar last year

Italian Wedding soup is a go-to for the Mrs. and her Italian heritage.

I took out a second mortgage, sold the dog and Kubota to buy an 8 pound beef tenderloin for the main course…..😳😉

Of course just joking, but tenderloin on the grill has been a tradition for many years. Used to get them for $5.99/#….not so much anymore…

Recieved a 2lb beef tenderloin from work for the holidays.

Fired up the pellet grill. Got it set to smoke with some hickory pellets.

Made up a homemade rub for it. Had it soaking with the rub most of the day.

This pellet smokers spoiling me though. It came with a meat probe that plugs into the display. So I can see internal meat temperature. 😬😬😬😬

I'll give it an hour on the smoker. Then will start some baked taters in the oven and will make a veggie to go with it.

Sunday dinner was chicken riggies. Product of Utica New York, about an hour north of us.

Kinda spicy chicken in a tomato/cheese/butter or cream sauce with rigatoni.

Trivia thing but I think the Halfmoon Cookie originated in Utica also.

I love those half moons. Our local store carries the ones from Utica. I treat myself to a tray of 8 then separate them to freeze in ziplocs for when I need a fix!

Looked up chicken riggies from utica and found several recipes. I'm thinking one could substitute venison strips for the chicken, and it would be tasty. I'm still boycotting commercially sourced chicken, more children hurt in a Los angeles factory.
