Plant pruning help?

We have a few of these Hydrangeas around the house we bought last year. I am unsure about pruning them back. Last fall I pruned back this one as shown:

I didn't cut off all the heads to keep something there for the winter. I had read there are two types of Hydrangeas. One that sprouts from 'old wood' and one that regrows from the ground. There are plenty of new sprouts growing on the old wood here.
I guess the question I have is how much to cut back? Last year these plants grew to at least 8' tall and were wildly out of control.

OH OH OH I know this one....
Cut it back to just above the last set of buds are at.
Unless you want to shorten it, then just cut it lower just above the buds.

I don't know how tall they will get but will try letting a few stalks go for it :)

It really became too bushy last year. Thanks for the advice, I didn't want to kill it.

I have a hydrangea bush that I transplanted about 6 years ago, and it has never flowered. I have one that is located at the edge of the woods that must have been planted there over 30 years ago and forgotten. I noticed just recently that it has flowered last year, and the dried-up flowers are still on it. I would like to transplant it to where it will be seen, but I fear that it will never flower again. Advise sought.

I guess I am fortunate as the deer and moose keep everything trimmed around here and I never have to prune. :)
