My granmaw taught me to never throw anything out that smelled good and tasted decent.... sooooooo....

I just finished the primary fermentation of the spple jack I am concocting. It has been two weeks since the fermenter was sealed up and the bubbler vent put in place. When I popped the lid I saw some of the prettiest heavy apple sauce floating on top of the mash and even though the sugar was gone and it tasted like a dry apple wine .... I thought I'd giv it a shot and try to make something from it.

I DID.... FOR SURE!!!:D:rolleyes::eek:;)

I got enough of the "sauced" apple sauce to make 10 pints of the best apple butter that I have ever spooned across my lips....

I added sugar, vanilla extract, nutmeg, a dash of cloves, and some all spice and cooked it down in 2 crock pots.

You can even taste a bit of the apple wine in the final product.

For the actual apple jack... I added more sugar to let it max out on the potential ethanol content before I "run" it in about a week....
