So do I need to disassemble and clean the moly out of the u joints, or can I just start using the correct type of grease going forward?
Never heard u-joint needle bearings referred to as high speed bearings. If you think about it, they hardly move much at all when the joint is spinning. Under load, yes, but spinning, not much.

The fact that the u-joint is spinning fast does not mean the needle bearings are.

No need to clean them out, just keep on lubing as you have been.

Just use any good grease to keep the joint lubed. Don't bother stripping and cleaning. Not necessary.

I'd give them a good 'flushing' with the correct grease. Pump it through until the new stuff comes out.
