Another try at egg rolls, also my trademark chicken tenders. Soaked the tenders in buttermilk prior to breading.

Had a nice piece of salmon? “Fresh” farm raised from god knows where, but it comes from the local Meijers in an aluminum tray that fits in my toaster oven. Kitchen still under reconstruction.

The gadget to the left is a magic corner and it pulls two sets of shelves from directly under counter and two more from the blind corner. No more hands and knees stuff!

Country ribs are finished 😎😎😎😎 4hrs on the smoker. Then doctored them up with cider vinegar and sweet baby rays. 👍👍👍👍 then finished in the oven for 4 hrs at 250.

They just fall apart 😎😎😎😎😎😎

One counter came Friday after many miscommunications, including the fact that they were supposed to be bringing the one with the sink, so we took off the plywood and took out the temporary sink. But they didn’t get that one done so they brought the piece of soapstone remnant I’d found, with the hole cut for the cooktop. Pretty happy with the soapstone, don’t care that it scratches easy, it is heat resistant, and remnant or not it is pretty. Now to get the cooktop hooked up and working!

As a young guy, I made Thanksgiving Dinner for 4-500 people every year.

Plainsville Farms turkeys...up near where Tughill Tom is.

One year, the smallest was 29 pounds; largest 39 (?)...did about 25-45 birds most years. Probably another 10-15 buffet hams.

While I did all the main course stuff, I did have prep cooks for other stuff we offered on the buffet.

After "retiring" my knives and tongs, went to my folks' for dinner. Liked the change, but still helped.

Now, the folks' struggle with it due to age. We took it on a few years ago, and they come over (Last year, no. This year, I hope, COVID is rampant here).

Starting to get prep going…...

As an aside, I got a couple of these sauté pans from Amazon, both 10” and 12”. They seem really good so far. Price was reasonable for a commercial-grade pan. For years, I've gotten my saute pans at a restaurant supply, but they haven't had them.....

I can’t imagine the logistics of cooking that many big turkeys? Ready over how many hours? How many ovens? Yikes! Gives me nightmares just thinking about it.

Makes it a little easier and less chaotic.

We have dinner on Friday since my wife works Thanksgiving day every year and gets Friday off instead. Plus less competition with the kids in-laws on whose dinner the kids are gonna make it too 😎😎😎😎

Got a 14lb turkey, corn bread stuffing, green bean casserole, maple and brown sugar candied carrots, mac and cheese made with Cabot extra sharp cheddar 😎😎😎 Those folks in the north east will be very familiar with Cabot cheese 😁 😁😁 BBQ smokies done in the crock pot, Dutch apple pie, peach cobbler, chocolate pie, and what ever the kids decide to bring 😎😎😎😎😎

Wally world happens to be the only place locally to carry that cheese 😉😉😉😉 So it just so happens to be my 1 and only willing trip to wally world every year during the holidays 😂🤣😂🤣😂🤣

Mac and cheese is prepped. If you want a plate, be here tomorrow at 3pm 😁😁😁 corn bread stuffing is prepped, as well as the green bean casserole. All ready to go in the oven tomorrow 😁😁😁😁

Dutch apple pie is just about to come out of the oven. Peach cobbler is fixing to go in 😎😎😎😎

My folks came over. Given their age and upstate New York weather, we eat early.

20 pound Turkey was almost done by 0930. 😳. Limped it along ‘til 1200.

When I saw the crack at the end of the breastbone thought it might be dried out. No worries, was quite good indeed. I was very careful 0930-1200 to avoid that. Not my first rodeo….

Ham and all the fixin’s came out well too.

Mom and Dad took a bunch of leftovers with them. They’re aging well, but time is showing. Haven’t seen them much last couple years…..

All cleaned up and they headed back home by 3:30pm.

It was a good day.

I'll inject the turkey with creole butter in the morning. Then stuff and place in a roasting pan in the oven. Last few times I've done this you didn't need to carve the turkey 😎😎😎😎 It just fell apart 👍👍👍👍👍
