There are two wires that go to the temperature gauge sending unit. One is black and the other is white with black stripe. Which is sending signal and which is ground?

In Kubota land, black is almost always ground.

Negative you are looking at the wrong sensor, that's the water temp sensor for the glow plugs not the Gauge.
The sensor for the gauge is in the head single lead white/yellow.
