There are two wires that go to the temperature gauge sending unit. One is black and the other is white with black stripe. Which is sending signal and which is ground?

Negative you are looking at the wrong sensor, that's the water temp sensor for the glow plugs not the Gauge.
The sensor for the gauge is in the head single lead white/yellow.

You would be able to identify who is who with either a test light or a multimeter.

But like the Wolfman just informed you, you're on the wrong trail.

A one wire temp sensor would generally be considered a type of thermistor.

These sensors are self grounding and the resistance will change based on temperature. 2 types I encounter in the automotive world, NTC (negative temperature coefficient) and PTC (positive temperature coeffecient).

NTC resistance decreases as temperature increases and vise versa with PTC. NTC is what is generally used for coolant temp sensors.
