So my new to me L3540 HST has the Auto Throttle Advance on it.. why would you ever have it not on? Its like driving a car with it on, not sure why you would ever turn it off... enlighten me please..

Auto throttle is wonderful isn't it? I only take mine out of auto throttle when I am inching my bucket or tractor into very small spaces where I have to lean off to one side to see the edge of the bucket and my toe might not be completely steady on the pedal. If the hand throttle is dialed back, it won't suddenly lurch in "turtle mode".
