Seems like we did this a few weeks ago, well we did it again.

Since you brought it up . . .
I learned something while cooking my last can (for a long time, I hope) this morning to have with yellow grits.
I always thought they must be made by some continuous process. But look at the wrinkles on the one at lower left. Apparently, they're made like wieners and then sliced?
I consider the day wasted if I don't learn something new. :p

I put them on the hot grill to give them a sear and then...

Cut the center burner off and left the two side burners on low. I pulled them off when their temperature reached 165°.

How did you get that many spuds peeled and cut without going crazy? I made roasted root veggies last night and many fewer seemed to take way too long. Potatoes I was just scrubbing.

I did this for a living many, many years ago.

Diced 300 pounds of potatoes for homefries in a morning way-back as a prep cook (at 16 years old), after the powered peeler took care of that part. Got real quick with it. An hour would do the whole 300#.

I prefer to just wash taters too. I can peel and dice a few pounds pretty quickly still.
