Specs call for 10-30 oil (diesel) however right now it is impossible to find around here, question I have plenty of Rotella 15-40 diesel for my other tractors, can I use this in the B5100 ? Thanks in advance.

The B manual I have specs 20w, 10w30 or 15w40. Personally, I would not use the 15w40 goo.
I have been able to get 0w30 M1 ESP at Advanced Auto. Plan to use it in the 50 hour change on the B2601 and the 10 year change on the Isuzu diesel. Currently, the Isuzu has 5w30 Castrol from VW in it. You can probably get it at your local VW dealership. 0w and 5w30 are just an improvement on the specified 10w30.

your cold conditions would dictate the 10w....... but if all you have is the 15w, you'll be fine - specially as the temps start coming up in Penn.
