Keep adding until it’s full. Use the book numbers as a rough estimate. It might take several days depending on temperature with gear oil. Just don’t forget about it being low. My M6040 took topping off 4 days with UDT2 to be completely full. Which flows better than gear oil.

Could be the brake switch or the control arm switch's. Right after I bought my ZD331 it had a random no start and it was one of the control arm switches had a loose connection.

Is the deck belt the correct length? Correct blades? All I remember from mine there wasn’t a belt tension adjustment, just the tensioner spring. Could try removing the blades to see if it still stalls it out. But you say everything spins freely?

You could try to start it by jumping the solenoids when the engine is hot. If you know 100 percent that it’s not a safety switch I’d remove the starter and have it rebuilt. Definitely cheaper than buying a replacement.

Starter could be bad. Only working when cold and not after it’s heat soaked.

What types of items are you lifting? You already have bucket hooks. So my vote goes to 5/16 chain.

I would start with the clutch pedal adjustment, and hope that’s all it needs. How many hours are on it? Definitely don’t keep letting it “move and pick up some speed” you’re just burning the clutch up more.
