I have an old B7100 and I want to increase the hydraulic pressure a bit. Its weight won't let it lift too much but I would like to get more out of it than I currently did. I heard there are shims are something you can install somewhere to increase pressure. Any advice is appreciated

You appear to have a B7100DT with B1600C loader running off tractor hydraulics. The loader is ahead of the tractor relief valve and sets the maximum system pressure.
The first thing you need to do is buy a pressure gauge and test your hydraulic pressure at the loader. The loader valve contains a pressure relief valve adjusting screw.

Will that also increase the lifting power of the 3 point hitch? I bought a stump grinder and it probably lacks 150 lbs of lift or less from being able to get it comfortably off the ground.
Short answer - YES.
We had this exact discussion just a few months ago. The B1630 loader is somewhat unique in that it operates at significantly lower pressure than the tractor hydraulics. As a result it reduces the lifting power of the 3pt. If you raise the loader operating pressure you bring the 3pt closer to specification but you exceed the safety setting on the loader. Pick your poison.
Thats why before doing anything you need to determine what pressure you currently have. If its below the loader specification you may have a pump rather than relief valve problem.
