For those of you in the Bayou, I was confirmed by my Cajun brothers as a RCA. If you know you know. Got to keep the flavors alive and well up North and consume a good amount of Cajun food to remain in good standing. Last time I was in Louisiana, I filled a couple coolers to bring home. I may break out some hogshead cheese for lunch now that I think about it

I don't know much about Cajun cuisine, but it's intrigued me for decades.

All I know is that 2 feet of snow and -8F is a great repellant for alligators, fire ants, chiggers (whatever they are?!?!), and almost all venomous snakes that Cajuns have to contend with...... 🥶 🥶;):unsure:

No pictures, but I did beef barbacoa the other day. Pulled beef, more or less with some nice seasonings. Served on soft tortillas with fresh veggies and cilantro to taste. Very good.
