What setting should I use? I don't want to burn out my grass.. Is Scott's fine or medium grain?

great / important question but impossible to answer as not enough info. I'm assuming your talking about small lawn/field application. Otherwise i would suggest getting your local Ag. rep involved before you start.
you first need to consult the fert bag. It will give you application rate per area. Often expressed as coverage like 3 pounds / 1,000 sq. feet is kinda common for home grade stuff.
then need to consult your spreader. this can be more complicated especially if spreader not geared to ground speed. like a drop spreader that drops if machine stopped so could drop 100% of hopper in one place if standing still. Gate opening, ground spread and width setting all come into play.
You could do small test, mark out small area, test spread and measure how much product used, consult bag and then you will know your application rate w/o risking much.
OR if you want simple but risky, you are only apply fertilizer (not herbs or pests.) so set your machine to spread at a very very low level that is super safe. Spread away, after 10 days if you need more hit it again. A little risky and inefficient in time / diesel use but pretty safe and will give you a bigger test on how your spreader works.
ROUGHLY speaking coarse material on my spreader is stuff 2mm or bigger. fine 1.25mm or less. But there are no world standards for particle size unfortunately. Pull sample from you bag and give it a measure. Spread lightly as if just fert you can always add more. if more than fert though (like insecticide or herbicide added) then you need to be much more precise
